Warming it up for Christmas, right from the grill!
As of this week, we will start sharing with you great recipes that you can use for your Christmas dishes. We know tradition is everyone’s a top priority for the dishes during this festive season, but it is always indulging to try out new and delicious dishes. What’s more to this, flavourful dishes from the grill! No one can argue on this. We do love our grills on the island; therefore we are committed into brining you unique recipes that will stand out from others! Are you willing to give it a try? Whether you are staying home, or packing up your things to celebrate on the picturesque Cyprus’ mountains and villages, we got you covered!
This week’s recipe will be with one of our favourite meat to cook! And is no other than rack of lamb! Yes, we know you prefer to cook the traditional turkey especially on Christmas day but really, who can resist to a beautifully cooked rack of lamb? This really special recipe includes a very warm ingredient: mustard! So, our recipe for this week is: Mustard Covered Rack of Lamb. This recipe needs 15 minutes preparation time, 30 minutes cooking time, therefore a total of 45 minutes, and can server 8 people! These racks of lamb are coated in a herb and shallot flavored, mustard marinade then seared on the grill. You can finish them off indirectly to keep the surface moist while the inside gets cooked through. Let’s start with the ingredients:
- 2 racks of lamb (8 ribs each)
- 1/3 cup/80 mL Dijon mustard
- 1 shallot, finely chopped
- 2 teaspoons/10 mL Worcestershire sauce
- 2 teaspoons/10 mL white wine
- 5-6 sage leaves, finely chopped
- 1 teaspoon/5 mL fresh thyme
- 1 1/2 teaspoons/7.5 mL sea salt
- 1 teaspoon/5 mL black pepper
First start with trimming the racks of all visible fat. We want you to do this in order for the lambs to stay juicy and not end up greasy, and also to keep them on the healthier site! After the trimming is completed, then very easy steps follow:
-Combine all the remaining ingredients and mix well.
-Place lamb in a large glass baking dish.
-Spread mixture over lamb, carefully cover with plastic wrap, and place into refrigerator for 6-24 hours.
After the marinate process is complete and we are ready to cook the meat, it’s the myGRILL Chef SMART or myGRILL Slim turn to take the stage!
Light approx. 3kg of charcoal using your myGRILL Charcoal Chimney Starter and place them in the basin. Place lamb on grill over medium high heat and sear for a couple of minutes per side, reduce heat or move off of direct heat and continue grilling for about 15 minutes per side. Once cooked, remove from heat and let rest for about 5 minutes before carving.
Tips for using the myGRILL™ Chef SMART:
Use the baskets (Stainless Steel Rotating Racks) of the myGrill™ Chef SMART grill for best results. Use the Automatic Mode and choose “Steak”. Cook for 30 minutes.
